Giant Chocolate Chunk Protein Cookie Recipe

easy recipes Mar 13, 2024

I have to share with you the recipe for this amazing chocolate chocolate chunk cookie that I've been obsessed with lately. I stumbled upon this recipe while looking for a healthier alternative to satisfy my sweet tooth, and let me tell you, it's a game changer. Not only does it taste delicious, but it's packed with better ingredients and it's just a single serving!

I used to think that indulging in a cookie meant sacrificing my commitment to eat more wholesomely, but this recipe proved me wrong. This cookie gives me that burst of energy I need, especially on a beautiful Saturday afternoon when I'm trying to finish cleaning my house. Plus, it's super easy to put together with ingredients that you probably have in your kitchen right now.

So, what do you need to make this little piece of heaven? Just some cocoa, chocolate chunks, a ripe banana, baking powder, almond flour, plant-based protein powder, and your choice of nut milk. It's that simple! And don't worry, I'll make sure to link the full recipe in the description below so you can try it out for yourself.

The best part about this recipe is that it's incredibly customizable. You can swap out ingredients to suit your preferences. For example, you can use any type of flour you have on hand, or even grind up oats for a different texture. I personally love it to be extra cocoa-y, so I add a bit more cocoa powder, because you can never have too much chocolate, right?

The process of making this cookie is as fun as it is delicious. From mashing up the banana to adding the protein powder and almond flour, it's a hands-on experience. And let's not forget about the chocolate chunk topping - it takes this cookie to the next level.

Once the cookie is in the oven, the anticipation builds as the aroma of chocolate fills the air. When it's done, you'll be amazed at the size of this cookie - it's huge! And even though it may look gooey in the middle, that's what makes it fudgy and irresistible.

I've found that this cookie is perfect as a pre-workout snack or as a little treat to brighten up your day. Plus, because it's based on banana, it stays wonderfully fudgy. Trust me, it's a delight you don't want to miss out on.

So, there you have it! A wholesome chocolate chunk cookie that's bound to satisfy your cravings. It's all about finding better ingredients to recreate your favorite snacks so you never have to feel deprived. Believe me, it's worth it.
Give it a try and let me know what you think! Until next time, happy baking!

Directions

Preheat oven to 350 F

Ingredients

1 Ripe Banana
1 scoop chocolate protein powder
1 tsp baking powder
2 TBSP almond flour (or flour of choice)
2 TBSP cocoa powder
A handful of chocolate chunks (2 TBSP)
Splash of nut milk as needed

Smash banana down to liquidy texture.
Add the rest of the powders
mix well
add nut milk as needed being careful to not add too much - Start with 1 TBSP
Batter should be thick but spreadable.

Put onto parchment paper on big cookie sheet (cookie will expand as it cooks.)

Bake for 13-20 minutes (check after 13 minutes)
Cookie will set as it cools.
If it does not set, too much liquid was added and it will be more like a warm fudgy lava cake - still edible and totally delicious!

What makes it "better" is lack of artificial ingredients you can't pronounce and the protein/carb/fat ratio.

Nutrition information of the exact cookie I made logged on the app Cronometer is
